Well, I've never really given this all that much thought. I guess dinner and a movie would be nice, but that really doesn't give you much of an opportunity to get to know the other person.
I would rather do something a little more cultural. Maybe a trip to the DIA and then dinner downtown. As long as the company is good I would be willing to do pretty much anything.
